Apple Chopped Salad with Herb Vinaigrette

Easy Apple Chopped Salad with Herb Vinaigrette. A classic crunchy salad with chopped apples, fresh veggies, and a zesty herb vinaigrette salad dressing.
Servings: 8

Ingredients

For the Apple Chopped Salad:

  • 1 head iceberg lettuce
  • 1 English cucumber halved and sliced
  • 2 fuji apples thinly sliced
  • 1 head broccoli cut into florets (1 1/2 cups)
  • 1 cup shredded carrots
  • 1 cup shredded pepper jack cheese
  • 1/2 cup toasted sunflower seed kernels

For the Herb Vinaigrette:

Instructions

  • Cut the head of lettuce into quarters and slice. Place in a large salad bowl. Top with sliced cucumbers, apples, broccoli, carrots, pepper jack cheese, and sunflower seeds.
  • Place the ingredients for the vinaigrette in a small bowl. Whisk until well combined. Salt and pepper to taste.
  • When ready to serve, pour the herb vinaigrette over the chopped salad and toss well. Serve immediately.
