I have made this Apple Chopped Salad with Herb Vinaigrette hundreds of times. For years I called it “The Salad” because it was the only salad I ever wanted to make. The pre-dinner conversation went something like this…

“Babe, what should we make to go along with this honey chicken?”

“You know, roasted potatoes, yeast rolls, and THE SALAD.”

Prior to blogging, kids, and moving cross country, I used to teach third grade. The teachers I worked with often had get-togethers for one reason or another, and we would bring dishes to share.

Apple Chopped Salad with Herb Vinaigrette

Easy Apple Chopped Salad with Herb Vinaigrette. A classic crunchy salad with chopped apples, fresh veggies, and a zesty herb vinaigrette salad dressing.

Ingredients:

For the Apple Chopped Salad:

  • 1 head iceberg lettuce
  • 1 english cucumber, halved and sliced
  • 2 fuji apples, thinly sliced
  • 1 small head broccoli, cut into florets (1 1/2 cups)
  • 1 cup shredded carrots
  • 1 cup shredded pepper jack cheese
  • 1/2 cup toasted sunflower seed kernels

For the Herb Vinaigrette:

  • 1/4 cup olive oil
  • 1/4 cup rice vinegar
  • 3 tablespoons honey
  • 1 tablespoon Mrs. Dash Seasoning
  • Salt and pepper

Directions:

  1. Cut the head of lettuce into quarters and slice. Place in a large salad bowl. Top with sliced cucumbers, apples, broccoli, carrots, pepper jack cheese, and sunflower seeds.
  2. Place the ingredients for the vinaigrette in a small bowl. Whisk until well combined. Salt and pepper to taste.
  3. When ready to serve, pour the herb vinaigrette over the chopped salad and toss well. Serve immediately.
