Sharing my first favorite salad recipe today, the Apple Chopped Salad with Herb Vinaigrette. Fresh, chunky, and packed with flavor!
Kicking off the summer months with something I know we all eat a lot of this time of year… Salad.
We’re celebrating “Summer of Salads” this year with one tasty, creative, and quick-to-make salad each week that you can enjoy all season.
As this is the first week, let’s start with a salad I’ve loved for years: Apple Chopped Salad with Herb Vinaigrette.
I have made this Apple Chopped Salad with Herb Vinaigrette hundreds of times. For years I called it “The Salad” because it was the only salad I ever wanted to make. The pre-dinner conversation went something like this…
“Babe, what should we make to go along with this honey chicken?”
Prior to blogging, kids, and moving cross country, I used to teach third grade. The teachers I worked with often had get-togethers for one reason or another, and we would bring dishes to share.
On one occasion, a friend brought a simple chopped salad that I could not get enough of. In fact, I think I might have eaten half the salad bowl at that particular gathering.
She made “The Salad” with iceberg lettuce, broccoli, carrots, and cucumbers, then topped it off with sweet apples, spicy pepper jack cheese, and crunchy sunflower seeds.
However, what makes this Apple Chopped Salad irresistible is the Herb Vinaigrette you pour over the top.
Believe it or not, the secret ingredient is Mrs. Dash… You know, that dried seasoning blend with over 20 herbs and spices?
That’s right. Just whisk it into a mixture of olive oil, rice vinegar, and honey and you have a truly wonderful salad dressing.
The Herb Vinaigrette makes this Apple Chopped Salad super tangy and zesty. However, this vinaigrette is a fantastic go-to dressing for all sorts of salads.
It’s sweet and zippy, which highlights the sweetness of the apples, and the spice in the cheese. It also makes plain-jane salad veggies really sparkle!
Even after so many years, I could eat an entire batch of this crunchy Apple Chopped Salad with Herb Vinaigrette.
Yet this time I controlled myself so the rest of the family could enjoy it with me!
Apple Chopped Salad with Herb Vinaigrette
Yield: 6-8 servings
Prep Time:15 minutes
Easy Apple Chopped Salad with Herb Vinaigrette. A classic crunchy salad with chopped apples, fresh veggies, and a zesty herb vinaigrette salad dressing.
For the Apple Chopped Salad:
- 1 head iceberg lettuce
- 1 english cucumber, halved and sliced
- 2 fuji apples, thinly sliced
- 1 small head broccoli, cut into florets (1 1/2 cups)
- 1 cup shredded carrots
- 1 cup shredded pepper jack cheese
- 1/2 cup toasted sunflower seed kernels
For the Herb Vinaigrette:
- 1/4 cup olive oil
- 1/4 cup rice vinegar
- 3 tablespoons honey
- 1 tablespoon Mrs. Dash Seasoning
- Salt and pepper
- Cut the head of lettuce into quarters and slice. Place in a large salad bowl. Top with sliced cucumbers, apples, broccoli, carrots, pepper jack cheese, and sunflower seeds.
- Place the ingredients for the vinaigrette in a small bowl. Whisk until well combined. Salt and pepper to taste.
- When ready to serve, pour the herb vinaigrette over the chopped salad and toss well. Serve immediately.
