Can I tell you a little secret?

When I’m entertaining, I like to shock my party guests a bit with the menu I serve.

If were having a casual get-together, like a sports event or yard party, I like to serve dishes that are a slightly more elegant than expected.

However, if we’re having a dinner party or wine tasting, I like to serve dishes that are slightly more casual than expected. (Like glammed-up burgers or chicken pot pie.)

I do this for a few reasons…

One, when we have a dinner party, everyone always expects my food to be outrageously elegant because I cook for a living. They come over expecting to have to be on their best behavior. Serving casual dishes puts people as ease, and acts as a conversation starter.

Two, when we’re having a causal get-together, I get tired of the same ol’ chicken wings and cheese dip. Don’t you?

Three, giving people what they aren’t expecting, makes the event more memorable!

Bagels may not seem like a fancy food. Yet, I’ve discovered you can dress them up to fit any occasion.

These simple 5-Ingredient Bagel Bites with Steak and Blue Cheese walk the line of casual and elegant. They start with tender Thomas’ Mini Bagels that have been toasted to golden perfection.

Then I topped each half with a fresh basil leaf, grilled rib eye steak, and shards of pungent blue cheese.

I drizzled thick balsamic glaze over the top, so that each 5-Ingredient Bagel Bites with steak and blue cheese, is kissed with tangy sweetness.

5-Ingredient Bagel Bites with Steak and Blue Cheese. These Bagel Bites are a bold and tasty party snack, with little prep work.

  1. Preheat the oven to 400 degrees F. Preheat the grill to high heat. Line a large baking sheet with parchment paper.
  2. Season the rib eye steak(s) with salt and pepper. Once the grill is hot, grill the steak(s) for 2-4 minutes per side to reach your desired level of doneness. Remove from the grill and cover loosely with foil for at least 5 minutes.
  3. Twist the Thomas’ Mini Bagels to separate. Place the bagel halves, cut-side-up on the prepared baking sheet. Toast for 5-8 minutes.
  4. Meanwhile, remove the basil leaves from their stems. Slice the steak into thin strips, against the grain. Slice the blue cheese into thin shards.
  5. Once the bagels are out of the oven, top each half with 1-2 basil leaves, then 1-2 slices of steak. Drizzle with balsamic glaze and top with shards of fresh blue cheese. Serve warm.

I love the “shock the guests” mentality! I would die if I went to fancy party and got a burger.
Actually, they once served burgers and fries at a really fancy wedding I went to. I was a bridesmaid…that was hard to eat gracefully at the head table.
Anyway. These steak bagel bites? OBSESSED! These are so fun – pinned!

This is such a genius idea, Sommer! I adore the pizza bagel bites that you bake up, but this is such an upscale, fun version that looks SO much better. Love it!

Love the idea of making something more elegant for casual get togethers and more casual for dinner parties – the surprise element make sit so much more fun…and I hear you on the pressure to make something to impress because people expect it.
