How to Make Dairy-Free Vegan Avocado Ice Cream

This homemade ice cream recipe is ridiculously easy with the help of a blender and an ice cream maker.

First, place the coconut milk, sugar, and a pinch of salt in a medium saucepot. Set it over medium heat and stir until the sugar dissolves and the coconut milk is perfectly smooth. The moment the mixture is smooth, turn off the heat. The hotter the mixture is, the more time it takes to cool, so don’t let it heat for too long.

Now pour the coconut milk into the blender.

  1. What about monk fruit or stevia instead of all that sugar?
What about light coconut milk instead of full fat? This would make a much lower caloric dessert and a lot less carbs.
