Why We Love This Grilled Grouper Recipe

Big juicy fillets of grilled fish are one of my absolute favorite things to serve. A tender piece of Grilled Grouper, slightly charred on the outside, yet moist and flaky on the inside, a fresh cool salad, and a nice glass of wine are all it takes to make any evening feel like an occasion.

This simple Mediterranean dish is both rustic and elegant, with its sweet citrus notes, briny olives, and punch of onion.

It’s a dish I can whip out in minutes and still feel like I’m serving something special. It makes the best quick weeknight dinner! Plus, cooking fish on the grill infuses it with a bolder flavor.

All summer meals should be so accommodating. However, if you are willing to grill year-round, this recipe makes a fabulous addition to your holiday lineup!

Ingredients You Need

  • Whole Grouper Filet – go for a whole grouper fillet to grill it all at once and serve it as a showstopper!
  • Red Onions – in whole large slices
  • Oranges – we will use the zest, and whole oranges too!
  • Olive Oil
  • Garlic – freshly minced
  • Olives – small, briney olives like kalamata olives
  • Salt & Pepper – to taste

How to Make Grilled Grouper with Oranges and Olives

Preheat the grill to high heat. Pat the grouper fillet(s) dry and then drizzle with olive oil. Sprinkle with minced garlic, salt, and pepper. About 1/2 teaspoon salt and 1/4 teaspoon pepper should do, but you can increase based on your taste. Then zest 1-2 oranges over the top of the grouper. Gently rub the grouper on both sides to distribute the orange zest, garlic, and seasoning.

Slice the oranges and onions. Grill the grouper for 4 minutes per side on medium-high heat, carefully flipping with two spatulas, so the fillet doesn’t break. Tent with foil, then grill the oranges and onions for 1 minute per side. You want to cook it until the fish flakes when you stick it with a fork!

Place the grilled grouper on a platter with the grilled onions, oranges, and olives. Serve warm.

Pro Tip: Grilled fish is best when it’s just barely cooked through. Overcooking your fish results in a dry, less-than-desirable, meal. A complete waste of good fish in my opinion. Try grilling the fresh grouper for just 3-4 mins per side. Check to make sure the edges of the grilled grouper are flaky, but the thickest part still seems soft.

Tips & Tricks

  • The thing to remember about any grilled fish recipe is that just undercooked fish tastes way better than overcooked fish.
  • Make sure to clean the grill grates. Consider brushing them with oil, so the fish pulls away from the grill easily. You can also use a wire fish basket or fish grate to make handling the fish easier, or cook the fish in a foil packet instead.
  • Then allow the fish to rest under aluminum foil for at least 3-5 minutes so the fillet can slowly finish cooking, off the heat.
  • Once the oranges and onions are charred a little bit, serve them with the grouper and a liberal sprinkling of olives.

Not a bad combination! Why not try it tonight with shaved fennel salad and a cool glass of sparkling white sangria.
