Apple Celery Root Gratin
Here it is, the jewel of your holiday table… Apple Celery Root Gratin.
The term “gratin” or “au gratin” meaning covered in breadcrumbs, is usually associated with creamy layers of potatoes and cheese with a generous dusting of crisp crumbs on top. This version, meant to dazzle your holiday guests, consists of paper-thin layers of vibrant celery root and perky Honey Crisp apples.
I just adore celery root. When it’s available in the fall and winter, I just can’t get enough of it. It has a pungent celery-like flavor, without the stringy consistency of the stalks. Celery root has the texture of a turnip or potato, making it perfect for soups, purees and for roasting. Simply peel off the rough exterior and prepare like any other root vegetable.
Because of its mild bitter essence, paring celery root with something sweet, like apple, complements the flavor bringing out its best attributes.
For this Apple Celery Root Gratin Recipe, I wanted to shave the apples and celery root into paper thin slices to bring an elegant quality to this otherwise rustic dish. I could have used a veggie peeler to do this, but just imagine the time it would take to shave 3 large apples and 3 large roots! Fortunately, I was able to fasten my Slicer/Shredder Attachment onto my KitchenAid Stand Mixer and slice them ultra thin in less than a minute.
To further accentuate the apples and celery root, this gratin recipe is layered with spiced cream, shredded Gouda, and topped with crisp bacon and panko bread crumbs. This apple celery root gratin is shear veggie heaven!
Apple Celery Root Gratin
Ingredients
- 8 slices bacon
- 1 small onion or 2 shallots chopped
- 1 cup panko breadcrumbs
- 3 celery roots
- 3 honeycrisp apples or Jonagold
- 1 2/3 cup heavy cream
- 2 teaspoons kosher salt
- 1/2 teaspoon black pepper
- 1 1/2 teaspoons pumpkin pie spice
- 8 ounces gouda cheese shredded
- 1 tablespoon butter for dish
Instructions
- Place a large skillet over medium-high heat. Once hot, cook 8 strips of bacon until crisp. Remove from skillet and drain on a paper towel-lined plate, reserving the grease. Once cooled, crumble.
- Place the chopped onion in the hot bacon grease. Saute for 3-5 minutes until softened and slightly browned. Remove the onions from the skillet.
- Turn the heat off and add the panko to the bacon grease and toss. Set aside.
- Preheat the oven to 400 degrees F. Butter a 9x13-inch baking dish (or LARGE quiche dish) and set aside.
- Peel the apples and celery root. Using the KitchenAid Slicer/Shredder Attachment, slice the apples and celery root paper-thin. (You could use a veggie peeler to do this.)
- Place the apples and celery root in a large bowl. Add the onions, cream, salt, pepper, pumpkin pie spice, and shredded gouda to the bowl. Stir well.
- Pour the mixture into the prepared dish and press to level.
- Mix the panko and crumbled bacon and sprinkle over the top. Bake for 45-55 minutes—until the top is golden and the edges are bubbling. *If the top starts getting too dark, loosely cover with foil.
- Allow the gratin to rest for at least 10 minutes before serving.

I would make.. well… EVERYTHING with this mixer! I have an extremely allergic special needs son, so I have an organic garden every year, and I do a lot of canning/freezing/making relishes,jams,sauerkraut, etc. Not to mention the fact that I cook from scratch for every meal and bake for my family of nine. I LOVE kitchenaid mixers, and I cried when my last one died a couple of years ago.
If I won this AMAZING mixer, first I would frantically jump up and down in excitement, then I would begin by making pizza dough, egg breads, cheesecakes, icings, cake, brownies, whipped cream, meringue, angel food cakes…. THE LIST GOES ON. I love baking ever since I thought I would hate it and took my intro to baking class in culinary school, I actually fell in love.

Hmmm. All the possibilities! I’ve always wanted to try making sausage so I’d probably start there.
I would use the Kitchen Aid Grinder attachment for grinding Deer meat to make Deer Jerky. I would use the Shredder for various vegetables….making salads, soups, casseroles. I would use the mixer attachments for making wonderful cakes, pies, desserts, breads. Wow….there are just too many things I would use the Kitchen Aid and the attachments for. I would NEVER come out of the kitchen! LOL
I love all the possibilities beyond mixing that the attachments give to the KA. I would use them all, all the time….

I would make some sort of hashbrown casserole with eggs whipped up scrambled style to pour over top of everything at the end…..ingredients would be: fresh potatoes shredded, along with fresh blocked cheese shredded, sour cream, butter, chives…crips bacon crumbled to top at the end….YUM, now i’m hungry ;) Thanks for offering this contest…hope i get lucky :) Not to mention all the holiday baking/recipes to try!

I would love these attachments, I had a KA Artisan with every conceivable attachment, but lost it in my last move (seriously, honey…the most important thing in my kitchen…he gets the Bosch machine but leaves the KA mixer >.<) and just haven't been able to afford another one. I used it most often to make carrot cake and zucchini bread, my dad has a fabulous garden and I always end up with so many of both I don't know what to do with them. The shredding attachment makes it SO easy. Aw man, I miss it so hard.

Oh, would I love to win this – have always wanted to make my own sausage – #2 son would be fighting me for it. Here’s keeping my fingers crossed.
Since I am retired and would never be able to afford this Kitchen Aid mixer, winning this would be a dream come true. Using it for baking and meal preparation would be such an adventure and cheaper when food is prepared from scratch. We use a lot of venison and venison burger that would be better prepared at home. Also, veggies for baking and casseroles would be so much simpler with this great appliance. It would take too long to talk about the many uses for it, so let’s just say, “It would be an appliance that would be used every day at my house.”
I am in culinary school right now and with the holidays coming up, I would love to make lots of goodies for friends and family.

I’d use the grinder attachment to make sausage from the Nilgai or white tail deer our friends sometimes give us from their abundance when they score big on a hunt in South Texas. With the slicer, I’d slice a big casserole dish full of potatoes for scalloped potatoes and then top them with the cheese I shredded with shredder attachment. After that we’d I’d start on some cookies–made with steel cut oats and the delicious homemade applesauce I made with the fruit strainer attachment. Yum! My husband and I have nine children and we do a lot of cooking!

Potato pancakes!
I’ve been making lots of cakes using seasonal produce from local farms. Boy howdy would I love to slice fruit for compote and whip up buttercream with one machine! My own Kitchen-Aid is on its last legs but I love it too much to take it out back and shoot it :(
I’d make macarons!
There’s an endless list of things I’d use this for! Freshly shredded cheese for lasagna and all of my favorite cookie recipes that I love to bake now, just minus the mess that comes with using my hand mixer.

Hi Sommer, My mom’s KitchenAid mixer broke recently — after 40 or so years of use! If I won, I would give it to her. Hopefully she would bake my kids the German Chocolate Cake they’ve been asking me to make!

Just last week I was borrowing a friend’s kitchen to bake a cake for my stepson’s birthday. I was hand-mixing the buttercreme and really giving myself an upper arm workout when my friend came home and said “you know, I have a mixer.”
Of course, it was just a little hand-beater, NOTHING LIKE the fabulous Kitchenaid. Birthdays are over for the year so I’d use it just as you have. Because this recipe has my stomach roaring.

Hi Sommer! What wouldn’t I make with a KitchenAid stand mixer?!? Basically everything that causes my weak-sauce hand mixer to start smoking! Breads, cakes, sticky buns, cookies, cheesecake, whipped cream…and, of course, apple celery root gratin! Thanks for the great giveaway!
I would love to add this mixer to my kitchen tools for many different recipes! I can think of one meal in particular that the mixer would be of great assistance, shrimp boulettes served white beans and parbroiled rice. What a wonderful help the mixer and attachments would be in grinding the vegetables, pulsating the shrimp, and blending the mixture so that the flavors are thoroughly united to produce a wonderful ball of essence. Served up with some flavorful white beans and rice, the shrimp boulettes would be a much easier meal to prepare for my family and friends with the KitchenAid stand mixer!

I look at the mixer with the grinder and all I can think about is making different types of sausages!!! Growing up, we had the metal grinder attached to the kitchen table that we kids would take turns with as my parents stuffed the casings with sausage. Thank you for bring back that memory!!

Would definitely make this recipe.I just discovered celery root last year and I’m a convert. The idea of putting it together with apples is brilliant! I’ve never had a KitchenAid mixer but it would be so handy. Right now I do all my slicing and mixing by hand and boy is my hand tired!

I tried growing celery roots in my yard but they never took.
The Kitchen Aid would be a dream come true in my house. I would use it when I make bread to mix the dough instead of using the old bread machine that seems to be giving in.

What a fantastic recipe. I have never cooked with celery root before. I would most definitely make this recipe with a new Kitchen Aid Mixer and shredder attachment. No way could I shred all those by hand. Going to start following on Facebook.

Wow, how amazing that you can do such a HUGE giveaway! I would be in HEAVEN with a kitchen aid. I’m a huge fan of baking but don’t yet have my own mixer (I borrow my mom’s sometimes) and so have to do most steps by hand. That makes the recipes almost three times as long (and three times as exhausting!). What couldn’t I make with a kitchen aid mixer?! We would definitely have a lot more cakes and cookies at home. Hubby would be very grateful!

The first thing I would make is some freshly whipped cream!! Having no electronic whipping devices, my arms dread the process of making the heavenly fluff. And there is no comparison to freshly whipped cream made by a Kitchen Aid Mixer!

I would love to make meringue, in my own house. I had an unfortunate experience this summer with making some at a girlfriend’s house and trying to bike home with it in a cooler and my bike breaking down. The pie was okay but not as pretty as it would have been if I had my own mixer at home!

Thanks for sharing this recipe. Looks fantastic and it is now on the menu for this weekend. It will be lots of work for me though of course because I don’t have a KitchenAid Stand Mixer and the Grinder/Shredder Attachment Pack. What WOULDN’T I make if I had the Kitchenaid mixer and all those attachments!? Homemade pizza dough, and grinding my own meat for burgers, sausages, etc. is where I think I would start. I have been wanting to splurge for a few years on a Kitchenaid – my old Sunbeam is OK but I think I’m ready to join the big leagues. I’m always in the kitchen on my days off and love cooking/baking. While I’m a bit bashful still to create my own recipes, I love the challenge of following someone else’s creation and presenting my results to my husband.

I’d love to make your apple celery root gratin! It sounds fabulous. I’d use the attachments on this marvelous mixer to make soups, stews, salads. I’ve never had a food processor or anything like this, so I do all my slicing, dicing, etc. by hand. And…of course I’d make cupcakes. I make festive cupcakes for nearly every occasion, and I simply cannot imagine having something like this to help me create my mini masterpieces!

OMG. This is such an amazing giveaway! I’ve been wanting one of these for so long, but can’t afford it! My mom has had the same Kitchenaide mixer for YEARS, they are wonderful! I would go nuts over winning a KitchenAid stand mixer with attachments (REALLY NUTS). I have a hand-held kitchenAid mixer now which is great but I waste a lot of time holding it when I could be doing other steps in a recipe. Plus it takes so much longer to beat egg whites or cream butter using my hand-held. Your recipe for Apple Celery Root Gratin is going on my Thanksgiving table—definitely—it sounds very special and really delicious. I’m so excited now! Oh Dennis! I haven’t had the energy to get back to blogging yet, but I have been helping with the cooking for our local Ronald McDonald House. The high schoolers would LOVE to learn how to make your glorious gratin!
I’d make the New York Times cookies (again), because the recipe says to cream the butter and sugar for 5 minutes, but that is nearly impossible with my dinky handheld mixer!

Easy answer: apple celery root gratin :) I’m unfamiliar with celery root, but like celery, so will be trying it soon, and this recipe in particular sounds amazing! I have been dreaming of owning one of these gorgeous babies forever! I bake cakes galore as well as macarons which would get priority but oooh I want a meat grinder attachment to be able to have ground lamb all the time for fabulous favorites like Turkish pizzas, lamb burgers and kefta!

I decided it is a good year to learn how to make Babka. I would love the help of a Kitchenaid mixer when doing each step. Or making delicious brioche, having a mixer would be so helpful:-) I love fresh ingredients, so grating my cheese for some lasagna sounds fabulous! And there is some venison steaks in my freezer I could grind, and make some mini burgers:-)

I am so making this gratin. I have every ingredient I need so it’s going to be served alongside a London broil that’s already defrosted in the fridge. It looks absolutely heavenly. Unlike you, though, I’ll have to use my peeler because I don’t own a KitchenAid (which is why I REALLY need to win this). :)

this looks UH-mazing!!!! Can you break down Pumpkin Pie spice for me??? We don’t have it in the UK..they only use Pumpkin for soup over here! (or curry)
Ha! It’s a blend of (usually) 4 parts cinnamon, 2 parts ground ginger, 1 part nutmeg and 1 part ground clove. It’s great for cold-weather recipes!
