A quick and easy Cheesy Guacamole Mini Quiche Recipe using puff pastry and Wholly Guacamole. The smooth creamy avocado essence makes these little tender bites really sing!
*A Guacamole Fairytale*
Once upon a time, there was a beautiful and wildly-talented girl who had a strange green addiction.
Her… issue, wasn’t dangerous.
Yet it was ever present, like a green cloud hovering over her at all times.
She craved guacamole at every moment of the day, and could never be satisfied, no matter how many baskets of guac-and-chips she pounded at the dinner table.
She dreamed in green, and longed to touch only silky-smooth textures, and hear sounds as smooth as an avocado.
One day, she had a crazed idea.
“What if, instead of just eating guacamole as is, I start putting it into recipes, so that everything I make will be zesty, green, and creamy!? Then my family, my neighborhoods, and the whole world will long for guacamole the way I do. MwahHahahahahahahaha!”
This notion relentlessly blanketed her mind. So much so, she set about baking, churning, and roasting guacamole recipes without ceasing.
At first, her neighbors were more than happy to take her tasty guacamole treats, but over time (as they craved things other than guacamole) the daily visitors pittered away.
Guacamole cakes, snacks, brunch items, cookies, jello, and souffles were piling up everywhere.
First they filled the spare rooms.
Then they filled the basement.
Finally there were so many guacamole recipes jammed in her house, there was no evidence of natural light to be found.
She had imprisoned herself in towering green banks of guacamole snacks!!
Unable to stop cooking, she started to cry.
“Will this ever end? Will I ever live a normal life that revolves around things other than guacamole?’
As she sniffed and wiped away tears, she noticed a rumbling behind her.
She paused to listen…
The sound of faint munching and tumbling green dishes grew louder.
Suddenly a man burst through the barricade!
When the girl looked up, she noticed the most dazzling green eyes.
Then… she smelled bacon.
The green-eyed stranger spoke with a voice as smooth as a ripe avocado.
“Hi, I’m your new neighbor. I was looking for a brunch item to go along with my bacon, nicoise salad, and mimosa, and someone told me I would find what I was looking for here.”
She was too bewildered to respond. Instead, she looked around, picked up a cheesy guacamole mini quiche, and handed it to the stranger.
He took a bite, and gazed at her with a half-dazed grin.
As if shackles were falling from her, she felt lighter than she had in years.
Gaining her composure, she asked, “Would you like another one? I made them with guacamole; that’s why they are so green and creamy.”
As she reached to pass him another guacamole mini quiche, the two brushed hands, and the girl knew her life would never be the same.
Epilogue: The two guac-loving strangers later married and made lots of green-eyed babies. The girl’s spell was broken forever, although she did still enjoy a good brunch on Sundays with Mimosas, bacon, and plenty of guacamole mini quiches.
Sooooooooooooooo (deep breath) oooooooooooooo.
This is what happens when you have insomnia and can’t stop thinking about Wholly Guacamole at 3 o’clock in the morning.
Or this is what happens when you’ve been reading too many “chick-lit” novels while eating chips and guacamole.

Cheesy Guacamole Mini Quiche Recipe
Yield: 9 mini quiche
Prep Time:10 minutes
Cook Time:20 minutes
- 7 ounce package Wholly Guacamole, any variety (I used spicy.)
- 2 large eggs
- 4 ounces softened cream cheese
- Pinch of salt
- 1 sheet puff pastry, thawed
- Fresh chive for garnish
- Preheat the oven to 400 degrees F. Spray a muffin tin with non-stick cooking spray. Cut the puff pastry until 9 even squares, then gently fold each square into the muffin tin, so the 4 corner stick up.
- In a medium bowl, whisk the softened cream cheese and eggs together until smooth. Then whisk in the wholly guacamole and a generous pinch of salt. Carefully ladle the guacamole mixture into the puff pastry shells. Do not overfill.
- Bake for 18-20 minutes until puffed and golden. Use a small knife to lift the mini quiche out of the muffin tins. Garnish with fresh snipped chive and serve warm!
