A savory Vegetable Lo Mein Recipe with sumptuous Homemade Noodles. The base of this dish is a two ingredient pasta dough that is so simple, you’ll be looking for excuses to make it!

Sometimes I feel like I was born on the wrong continent. I would happily eat rice, pan-fried noodles, sushi, and spicy curries the rest of my days without complaint.

When we visited my parents in Tulsa, OK this summer, my secret goal each day was to eat at my favorite Vietnamese restaurant. It was the constant joke with my family, “Will Sommer find a way to sneak in her lunch appointment today?” Triumphantly, I did most days.

One of my favorite midweek go-to meals is stir fry. My kids get really excited when they see me put on a pot of rice and pull out my wok. Yet for a slightly more luxurious meal, I like to pull out my KitchenAid Mixer and Pasta Attachment to make Vegetable Lo Mein!

Preparing homemade noodles takes very little time for the impact it has on the dinner plate.

This pasta dough takes me less than 15 minutes to mix, knead, and send through the pasta attachment.

I use this pasta dough for all sorts of ethnic dishes, but my favorite way to prepare homemade noodles is in vegetable lo mein.

As with any lo mein recipe or stir fry, it’s best to start with a really hot wok (or big ol’ skillet) and a scant amount of oil. Then pan fry each item alone in small batches.

That way the veggies are bright, crisp and lightly fried instead of limp and steamed, under the weight of the other veggies.

You can add or eliminate as many veggies as you want.

As for the sauce, you may already have soy sauce and sesame oil in your pantry, but look for good fish sauce and Chinkiang Vinegar (Chinese Black Vinegar) in the international section of your grocery store, or at an Asian market. If you love stir fry dishes, you will want to have these ingredients on hand!

Cook Time: 15 minutes

Vegetable Lo Mein Recipe with Homemade Noodles

Ingredients:

For the Homemade Noodles:
3 cups all purpose flour, plus extra for dusting
4 whole eggs

For the Vegetable Lo Mein:
1 lb. pasta dough (recipe above)
3-4 Tb. coconut or vegetable oil
1 red bell pepper
2 small yellow summer squash
1 bunch green onions
8 oz. mushrooms
1 cup shredded carrots
2 Tb. sesame oil
3 cloves garlic, minced
2 Tb. fresh grated ginger
1/4 cup soy sauce
1/4 cup Chinese black vinegar (or rice vinegar)
1/3 cup fish sauce
1/4 cup water
1 Tb. corn starch

Directions:

For the pasta dough: Pour the flour on a clean work surface. Make a deep well in the middle of the flour and crack the eggs in the center of the well. Using a spoon, gently break the yolks and stir the eggs to collect the flour around the edges. Stir in more and more flour until the entire pile of flour clumps.

Then gather the clumps and knead into a ball. Knead aggressively for 5 minutes, until the dough becomes smooth and firm.

Wrap the dough in plastic and allow it to rest while you prepare the veggies.

For the Lo Mein Recipe: Trim and slice all vegetables into thin bite-size pieces.

Heat a large pot of salted water to boil the pasta and get a wok (or large skillet) out for the lo mein. Also set out a pan to hold the sauteed veggies.

Flatten the dough ball a little and cut it into 2 inch strips. Place the pasta roller attachment on the KitchenAid mixer and run each piece of dough through the roller to flatten. Lay each piece out on a floured surface.

Then switch the attachment to the spaghetti cutter, and run each sheet of dough through the cutter to form thin noodles. Flour the noodles as they come through the cutter and lay them out on a flour surface. *If you don't have these attachments you can use a counter top pasta maker, or even roll the dough out flat and cut with a pizza roller.

Once the noodles are ready, heat the wok over high heat to stir fry the veggies. Place 1-2 tsp of oil in the wok and wait until it smokes. Then place one vegetable at a time in the wok and stir fry for 1-2 minutes moving constantly. Scoop the veggies out and place in the holding pan, then repeat with the next vegetable. You want the veggies to be bright, crisp and barely cooked, not soft and flimsy. This should take 5-8 minutes total.

Once all the veggies are cooked and moved to the pan, turn the heat to medium and place the sesame oil in the skillet, followed by the garlic and ginger. Saute for one minute, then add the soy sauce, black vinegar, fish sauce, water and cornstarch. Whisk immediately to incorporate the corn starch then allow the sauce to thicken a little.

Once you start the sauce immediately drop the homemade noodles in the boiling pot of water. They should take only 2-3 minutes to cook. Drain well.

Once the sauce thickens, pour the drained pasta and all the veggies back into the wok. Toss and simmer another minute or two to thoroughly coat and season the pasta. Serve warm.

    Any Pasta Dish Loaded with Veggies would be my Fav. Last two I’ve made to date were a creamy Goat Cheese pasta dish with Sausage and Broccoli. Second dish was a Creamy Fresh Charred Corn Sauced Pasta with Red Bell Peppers, Onions, alittle Chorizo and Chicken. Both were Fantastic.

    I love pasta, but have not made it myself. My friend made a homemade pasta dish by simmering the fresh noodles in chicken broth and adding shredded chicken before serving. Simple, but delicious!

    My favorite pasta dish is Farfalle pasta with broccolini. It is tossed with a grapeseed oil that has been heated with lots of fresh chopped garlic, kosher salt and red pepper flakes. The whole dish is hit with some Asiago cheese (or if you have some on hand -grated Kasseri cheese). This pasta is amazing warm and fresh, but you can also make it ahead and chill it to bring to a pot luck or picnic and it holds up well because it contains no mayo! YUM

    What a great giveaway. Basically, I love any kinds of pastas cooked in various styles, either it’s Italian pasta, Chinese LoMein, Pad Thai… or even simple beef/wonton noodle soup. What can I say… I love noodle :D

    My favorite recipe is for chicken and drop noodles! An old family favorite! Put some shredded chicken and broth in a pot to boil. I make a recipe for homemade noodles, instead of rolling them out I drop them from teaspoons into the broth. I cook the broth down until it makes a gravy, YUM. Thanks for the idea about using a kitchen-aid to make the chinese noodles. I haven’t any attachments for my kitchenaid mixer. What a great contest.

    I am Hungarian and when I make chicken paprikas I make my own noodles with it. The best noodles are homemade. My kids love it. I had a choice to pick an attachment with my Kitchen Aid mixer but I picked the grounder with it. I would love to win it.

    My favorite pasta dish is spagetti carbornara – Ever since another cook posted her recipe for it, stating it was her husband’s favorite, it has now become my husband’s favorite, as well. My husband absolutely loves all things pasta (he calls himself a lazy eater – he doesn’t like to ‘work’ at his food, and pasta gives him that security!!) And we received a Kitchen Aid mixer for our Bridal Shower in 2005 – I don’t use it as often as I can, because I have no attachments, and there are only so many things that need mixing/blending! LOL

    Pasta is definitely my stuck-on-a-desert-island food item. How to choose my favorite? I have a Scott Conant recipe for a simple tomato sauce made with fresh tomatoes and basil/garlic-infused olive oil. It’s finished off with a touch of butter. Absolutely delicious, especially since a farmer at the market started growing San Marzano’s!

    my favorite pasta dish…right now, today at this moment…is probably pad se ew. but i recently made my own pasta with a good friend, and her counter mount pasta maker. and i am sure that if i had a kitchenaid attachment for my mixer i would have a new favorite pasta dish every week. what a great way to procrastinate for grad school!

    My FAVORITE pasta…….. Hmmmm that’s a tough one. If I had to pick just one, but I would say a roasted tomato sauce over angel hair. It’s best when the tomatoes are homegrown.

    I love to have homemade pasta with fresh homemade basil, feta cheese, kalmata olives, tomatoes, all different colors of peppers, artichoke hearts (the sky is the limit!!!) It’s such a delicious meal and even my children love it!!!
    I have a Kitchen Aid Mixer, but not the pasta attachment yet. It’s definately something that I would use and my family and friends would enjoy!

    I love pasta any way I can get it! I love the House Lo mein that I get from my local take out, any lo mein for that matter. I love the spices and the crisp vegetables. I also love spaghetti with tomato sauce. I make my own sauce sometimes and my family just loves it. Would love to be able to make my own pasta as well!

    Wow!! Love the look of your dish and the ingredients. I’ve always wanted to try and make my own pasta.

    Looks DELISH! My family & my FAVE pasta dish is my spin on Curry Chicken over egg noodles :-) Lots of spices with a kick but evened out with the use of coconut milk in the sauce YUM!!! Would LOVE this attachment to up the anti by making my own fresh pasta for this & many more dishes!

    I love making pasta! I make a mean chicken fettuccine alfredo that is requested of me by everyone. I also make a wonderful filipino dish called pancit canton with fresh noodles and vegetables with shrimp. The other pasta dish I am known to make that is scrumptious is my BLT pasta salad. I would use these attachments all the time!

    My grandma’s spaghetti and crabs was my favorite pasta dish of all time. I made homemade pasta over the summer using a rolling pin and a pizza cutter; it was a lot of work, but still delicious!

    Mmmm…Just saved your Lo Mein recipe and going to be making it soon!
    My favorite pasta dish is Carbonara, but when I don’t have the ingredients I like to make a very plain and simple but common way our family (being half Italian) would make pasta when craving noodles but not wanting to go all out. Boil any kind of noodle, drain and add butter, parmesan cheese, salt and pepper to taste….I love to make it a little healthier by adding mixed vegetables in to the noodle water the last few minutes. Also great with shrimp or chicken and turning it into a meal.

    I make a squash parmesan tortellini that I cook in a spicy enchilada broth with southwestern veggies. YUM! Would trade my firstborn for that pasta attachment… just let me know, we can arrange the pickup location ;-)

    My favorite pasta dish is probably eggplant parmesan, but what I end up making the most at home usually is to clean out the fridge. The most common ingredients are chicken, veggies, always onions, sundried tomatoes, garlic, olive oil, a little butter and whatever seasons I feel like at the time.

    This is so great, Sommer. Takes me right back to childhood – this is exactly how my grandmother taught me to make homemade noodles. And she rolled them out and cut them by hand. I love this so much! My favorite has to be homemade chicken and noodles, just like she made them!

    By far, my favorite pasta dish is Penne Alla Vodka! The creamy smooth sauce with that spicy vodka kick, even better with a bit of bacon crumbles! I love the contrasting texture and flavor. Rich and fulfilling :)

    Spaetzel! Brown sliced spicy sausage, caramelize sliced onion, toss in garlic, sliced cabbage & cooked spaetzel. Season with salt, pepper, celery seed, thyme, paprika. Add a bit of broth to steam the cabbage if necessary.

    A great 1-pot meal. Leave out the sausage for a side dish, use your choice of flavorful oil — some German restaurants have turned this peasant dish into by sauteing in butter.

    Whoa! I had no idea they made a pasta roller set. How cool is that?! My favorite pasta is a great mac & cheese (comfort food junkie), but pasta pomodoro is a very close second. And stir-fried Asian noodles are tied for second. Yes… I am a noodle junkie.

    For me, the best pasta is the simplest: tossed with a simple sauce of diced fresh tomatoes cooked with sliced garlic, wilted spinach and a bit of olive oil and finished with freshly grated parmesan. Also, love my Kitchen Aid – recently upgraded to a pro model. Thanks for the good work and the opportunity to win the pasta maker attachment. cj

    My favorite pasta dish is probably spaghetti carbonara. It is so simple, but has a great flavor with the bacon and the cheese. It makes it so the flavor of the pasta really pulls through.

    I used to be obsessed with fettucine alfredo, but now I can’t live without my “asian noodles”- thin udon with whatever veggies i have on hand with a sauce made with sesame oil & vegetarian oyster sauce. Its so good!!!!

    This looks great, and what a generous giveaway! One of my go to pasta dishes is a peanut soba noodle stir fry. The sauce is peanut butter, hoisin, ginger, garlic and I use whatever veggies I have on hand – it’s always a hit!
