Bacon and Pecorino Popcorn

What is it about popcorn that makes us so happy? The crunch? The light airy quality? The fact that you can eat a lot of it at one sitting?
Yes. All those things.
On nights I have a late-night craving, I like to pop a big satisfying bowl of white popcorn in just a touch of oil and a sprinkle of sea salt. A healthy bowl of popcorn that is loaded in fiber and low on fat. Something I can feel good about eating, even though it’s close to bedtime.
But that is not the popcorn recipe I’m sharing with you now.
Today I’m letting you in on a deep dark secret; my “guilty pleasure” popcorn recipe. The popcorn recipe I make when I’m feeling really naughty… or want to bribe someone.
A bewitching snack packed with salty rich flavor and a load of crunch. Ripe bits of nutty pecorino romano and crisp fatty bacon, are gently tossed with bacon-fat laced white popping corn. The best part is, it only takes 3 ingredients and 10 minutes to make.
That makes this pecorino romano cheese and bacon popcorn recipe even more lethal!
I simply cook some chopped bacon in a big pot. Spoon it out when its crisp. Then add the popcorn kernels straight into the remaining bacon grease. Once the popcorn is fully popped I toss the bacon back into the popcorn, along with a good dose of crumbled pecorino cheese.
As long as you pick up handfuls with bacon or pecorino cheese, you don’t even need salt.

Yield: 6 servings
Prep Time: 3 minutes
Cook Time: 10 minutes
Popcorn Recipe with Pecorino Romano and Bacon
Ingredients:
12 oz. thick cut bacon, chopped
½ cup white popcorn kernels
3 oz. pecorino cheese, crumbled (could be aged asiago)
Directions:
Place a large deep pot over medium heat. Add the chopped bacon and fry until crispy. Remove the bacon with a slotted spoon and place in a paper towel lined bowl to drain.
Add the popcorn to the pot with remaining bacon grease and cover leaving the lid slightly off-set to vent.
Pop the corn then pour into a large bowl.
Toss in the bacon and crumbled cheese. Serve warm!

Question: why do you chop the bacon first? Do you think you could do full strips, then chop while the popcorn’s popping? I hate fishing chopped pieces from my pan, it drives me crazy!

Yes you could definitely do strips, then crumble them. I just like the pieces to be somewhat uniform in size so they don’t sink to the bottom.

Cheesy popcorn has been my favorite type of popcorn since childhood…has not changed since childhood. But I never ONCE thought to use pecorino – so good!! And the bacon…you got it!

I have been putting “Bacon Salt” ( which is bacon flavored without any bacon actually in it) on my popcorn for a year or so since I found the seasoning but never thought of trying real bacon in popcorn. what a great idea for a decadent treat now and then
