Breakfast Salad

The unconventional morning meal ~ Breakfast Salad with Cinnamon Toast Croutons and Maple Vinaigrette. Who knew a salad for breakfast could be so good?

I’ve noticed a trend here in Asheville and on the menus of other popular breakfast joints around the country ~ salad for breakfast. Before you turn up your nose, let me clarify. These breakfast salads are not bland leafy side-salads with bottled ranch dressing, but bold hearty meals. A good breakfast salad encompasses everything that makes breakfast so appealing: carbs, eggs, pork-fat and sweet accents.

After exploring these salads at several favorite breakfast joints, I decided to work on my own version.

First, I wanted to put my family’s favorite morning flavors into the salad. That way, it would be hard for the kids to resist. My version had to include: bacon, maple syrup, cinnamon toast and eggs.

The Cinnamon Toast Croutons were the first inspiration. Truly, I could eat a whole pan of these babies. In fact, it’s important not to make them too far in advance, or there will not be any left for the salad. Maple Vinaigrette provides a sweet and poppy essence with apple cider vinegar and Dijon mustard. The addition of candied nuts and dried cherries offers a granola-like quality.

Cinnamon Toast Croutons

Prepare your morning eggs just the way you like them, and pile it all on a bed of crisp baby spinach. THIS, my friends, is a great way to start the day!

Breakfast Salad with Cinnamon Toast Croutons

Yield: 6 servings

Prep Time: 15 minutes

Cook Time: 20 minutes

Breakfast Salad with Cinnamon Toast Croutons and Maple Vinaigrette

Ingredients:

For the Cinnamon Toast Croutons:
6 cups of French bread cubes
3 Tb. melted butter
¼ cup sugar
1 tsp. cinnamon
Pinch of salt

For the Maple Vinaigrette:
¼ cup pure maple syrup
¼ cup vegetable oil
1 Tb. apple cider vinegar
2 tsp. Dijon mustard
½ tsp. salt
Pepper to taste

For the Breakfast Salad:
1 cup candied nuts
¾ cup dried cherries
12 oz. bacon, cooked and crumbled
6 packed cups baby spinach
12 eggs, prepared to order

Directions:

For the Cinnamon Toast Croutons: Preheat the oven to 350 degrees F. Lay the bread cubes out on a rimmed baking sheet. Mix the melted butter, sugar, cinnamon and salt together and drizzle over the bread cubes. Toss and bake for 5-10 minutes until toasted.

For the Maple Vinaigrette: Whisk all the ingredients together until smooth. Set aside.

Cook and drain the bacon.

Prepare the eggs to your liking—scrambled, poached, sunny-side-up.

Prepare each salad plate with a heaping cup of baby spinach, topped with cinnamon toast croutons, candied nuts, dried cherries, and crumbled bacon. Then top each with 1-2 eggs and drizzle with maple vinaigrette!

I’d like to point out, I used my new favorite skillet preparing this breakfast salad. Not long ago I was introduced to ManPans Products. Admittedly, when I first picked them up, my thought was that they were too light-weight to conduct heat well. I was also a little leery of “non-stick” surfaces, so I did a bit of research (and testing) and am thrilled to report my findings.

ManPans products are an anomaly. Not only do they conduct heat well, they conduct it so well, you can actually turn your heat down to save energy. They are “Green” in other ways as well. When heated, they release absolutely no toxins into your food, providing safer and better tasting dishes. ManPans are made here in the USA. They are extremely sturdy, almost impossible to scratch or chip and easy to clean. I’m impressed, to say the least.

    I love the idea of a breakfast salad.
    When I have a little extra time I love to get greens from our garden (arugula or swiss chard right now) to stick on some bread with goat cheese and an egg. So the salad idea definitely talks to me.
    I’ve seen a lot of salads with watermelon too, it would be perfect for breakfast too…

    I think my favorite thing to do in the pan is a stir-fry. So many variations available.

    Veggie burgers! I have an awesome copycat burger recipe from Houston’s restaurant!!!! I make about 20 at a time, freeze them, them take them out one by one as I need them. They fry up fast, easy, and yummy in minutes!!

    You had me from the moment I saw the egg! Breakfast is far and above my favorite meal of the day, but I’ve never even considered having a salad for it! I think that Adelle Davis quote is spot on. Our family would probably do without the cinnamon croutons (or maybe just those by themselves), but the rest will be on the menu some morning.

    The favorite thing to cook in a skillet? Eggs, of course!

    I am in love with your croutons, and I know my kids will be too. The love the savory versions straight out of the bag.
    As for a skillet I love to saute fresh green beans (from my garden) with some butter, salt, and pepper. Simple I know but absolutely divine and crunchy.

    This looks AMAZING, and I do anything to add spinach in my meal (even a spinach-blueberry smoothie!).
    My favorite thing to cook in a frying pan is a morning egg scramble with fresh vegetables, oregano and olive oil. But on the dessert side, I love making crêpes with warm, sweet fillings!

    my favorite thing to cook in a frying pan is scrambled eggs. I bought some of the green pans from QVC and loved them until the outside of them began to flake off. Not the inside, but the outside coating so I am in dire need of some new pans!

    My favorite is searing chicken breast, mushrooms, minced garlic in sesame oil and at the last minute toasting sesame seeds. Oh yummy, I will never get tired of this dish. Just splash with a little soy sauce and this is a meal!!

    My favorite thing to cook in a fry pan is a breakfast dish my mom made for me when I was a kid: huevos escondidos (I know this goes by many other names, as well). This is a slice of bread with a hole cut out in the middle and an egg perfectly fried in the hole. Add a slice of cheese on top for an extra special breakfast.

    I use my fry pan for almost everything! My favorite things to stir fry are veggies-peppers and onions, or squash! We also make TONS of omelets!

    Every morning I make a big fat omelete with the same pan. Having two would speed things up with sauteeing the veggies and cooking the meat separately! Unfortunately, I think it’s time for a new pan! So this would be a great ‘win’ for me….

    Sometimes I have a salad for breakfast but always with an egg! I would cook an egg in a small frying pan 9 times out of 10. I’ve never seen these pans before, will have to look for them! I like your cinnamon toast crutons, yummy;-)

    I love the idea of salad for breakfast and all the requisite flavors are here! I use my frying pan every day, today it was a pineapple fried rice and pan-fried chicken breasts.

    fry pan … favorite? … well, cop-out answer would be, anything i get to deglaze. i love deglazing. it’s the whole physics/chemistry thing. but if pressed, i’ll go with stir-fried spinach. it amazes me how it coooks down to nothing.

    That’s such a cool idea. I use a lot of maple vinaigrette on apple and celery root-based salads, so i can already taste 90% of it. I’m thinking instead of pork or bacon, there are a lot of cool things you could do with smoke salmon as well — somehow get a cream cheese glaze to the french toast, then the rest of the assemble. dressing … will have to think about that one.
